A few weeks ago, I went on a family vacation to the British Virgin Islands, and it was amazing! I have to show you some of the amazing food I enjoyed while I was there.
Conch fritters are the most delicious food, but they are impossible to find in Massachusetts. So when I say I ate them daily, I’m not exaggerating. 🙂

I have a few other yummy creations to share with you, this time from my own kitchen! I received a Crockpot for the holidays, and I’ve had a few successful Crockpot adventures. I made a dish with spaghetti sauce, chicken sausage, onions, and red peppers that turned out really well. The only downside was that I didn’t love how the onions and red peppers turned out. The red peppers were a little overcooked for my taste, and I love sautéed onions. Yesterday, I recreated the recipe, using fresh chicken chorizo and some sockarooni sauce from the jar. This time, I sautéed the onions, red peppers, and some mushrooms to add on top and I loved how it turned out. No pictures of this one, because I chowed down immediately!
Yesterday, I also made pumpkin squares. My mom got the recipe at Williams Sonoma a few years ago. All you need is yellow cake mix, pumpkin pecan butter, and a few other baking ingredients. They’re so easy, but because they have three layers, they look so fancy. My boyfriend said they might be his favorite thing I’ve ever baked for him. I apologize that there have already been a few pieces cut out in this pic, but at least you can see the layering better! 🙂
At a little cafe that I love, I tried a sandwich with sweet potato and avocado, and I was desperate to recreate it at home. Inspired by that sandwich, I made a clean-out-the-fridge sandwich. I toasted two pieces of bread, and spread on mashed avocado, mashed kabocha squash (for a lack of sweet potatoes), Laughing Cow creamy swiss, and apple slices. It was delicious and tasted so much more gourmet than your usual sandwich!
I’ve had some great food recently- now on to my favorite dessert: air-popped popcorn!
