Cowboy Rubbed Ribeye

My boyfriend came to town in March for his spring break, and I knew it would be a perfect excuse to splurge on ingredients and cook a really out-of-this-world meal together. I am a huge red meat lover and so we decided to go for a twist on a favorite, steak and mashed potatoes. I turned to the never-failing food52 (seriously, I have never made a bad recipe from there!) and found a recipe for a cowboy rubbed ribeye which sounded perfect. My boyfriend’s favorite things are coffee, dark beers, and anything spicy, so this was a dish made for him. While reading the comments section, I noticed someone had commented that they made it with goat cheese and caramelized onion mashed potatoes- so I immediately searched for that recipe thinking it would be a perfect pairing!

We headed to Savenor’s to purchase our ribeye and when they asked us, “can I interest you in our dry-aged ribeye?” we were powerless to say no. This was the best cut of meat I have ever purchased. It was phenomenal. Do yourself a favor and check out Savenor’s dry aged meats- you will not be disappointed.

Before starting the steak, I caramelized the onions and then proceeded to make the mashed potatoes. It was labor intensive but not too difficult- as long as you have patience while caramelizing! It was fairly straightforward to make the steak. I just put the rub on, seared it, and finished it in the oven. Then I made the pan sauce using Finch’s Secret Stache Stout. It was not a chocolate stout but it definitely did the job! We served it up and enjoyed with the rest of our stout. I highly recommend trying these recipes- let me know if you do!
